Whipped Cream, Non Dairy but totally amazing Delicious recipe.
I seriously love whipped cream who doesn’t. I am also seriously lactose intolerant and adjusting to that has been a challenge. One of the biggest things I’ve missed is whipped cream and ice cream. I love coconuts and anything to do with them. Tonight I messed around with a recipe I found for coconut whipped cream and made it my own. I recently purchased coconut nectar and I used that tonight to sweeten my whipped coconut cream. Coconut nectar is a low glycemic sweetener that is high in nutrients. It also has 16 essential amino acids. Because its a low glycemic sweetener you won’t get a sugar crash. You may be wondering what the heck amino acids are. Amino acids are are needed to repair and rebuild muscle tissue. Your body needs more than 20 amino acids to build and repair muscle tissue and coconut nectar contains 16!! So in short this is a kick ass way to eat desert. I love finding healthy ways to satisfy my sweet tooth because it’s very sweet lol. I hope you enjoy this recipe as much as I do.
Kick ass Coconut whipped cream recipe
1 can full fat coconut milk
1 teaspoon vanilla extract
1 Tablespoon Coconut Nectar
Place coconut milk in refrigerator over night. Open can and scoop out all the fat that has floated to the top and hardened. Place in a bowl with coconut nectar and vanilla extract and mix well with a hand mixer. If you need it a bit sweeter add 2 tablespoons of coconut nectar. Enjoy!!
