Tuscan Tomato Salad
This recipe means so much to me. It’s my boyfriends families handed down from generation to generation. I remember when I first started dating him and I was in the kitchen with him and his mother in his Grandfathers house which was purchased after his Grandfather won a gambling game while serving in the Army.
I was cutting the tomatoes and said this would taste great with some tomatoes in it. It was like the record player stopped, everyone looked at me as if well… as if I said I murdered someone.
His Mother looked at me and said we don’t put onions in this recipe. I love thinking about that day. I love tradition and I respect keeping things as they were, as past generations made it. So, from that day forward I knew never to add a damn thing to one of their recipes. Well, unless I wanted to die.
There are no exact measurements to this so make it your own. Put in the amounts you feel it needs cause that’s how it’s made. That’s how people once cooked and I love that and have a strong desire to see that kind of cooking return. So remember there are no rules except one rule. Don’t add anything new. Enjoy!
- 6 cups cut up Ripe Tomatoes ( we cut them up in large chunks)
- 1 Green Pepper large dice
- 4-6 Garlic cloves sliced
- Salt to taste
- Black Pepper to taste
- Olive oil
- handful Basil ripped
- 1 bunch Parsley minced
- 1 Italian pepper rough chopped
- Mix all ingredients together and allow it to sit for atleast a 1/2 hour. Make sure you have some good Italian bread to dip in the tomato juice. All measurements are approximate. Like I said we never measure and neither should you.
