Pumpkin Spice cheese danishes
Did you ever think about taking the pumpkin spice craze and mixing it with the a cheese danish? Well I did and what came out was a delicious mix of Autumn perfect for a Sunday breakfast. What I also loved was that I was able to get a great tasting danish without any of the white stuff. You know sugar the stuff we should be avoiding as much as possible. It only took a few ingredients and a couple of minutes to put together. After my first batch I got inspired to do a delicious chocolate version so I added some Nutella. Who doesn’t love Nutella?
1- 8 ounce package of Neufchatel cheese or cream cheese
1 cup pumpkin puree
3 teaspoons pumpkin spice
1 package puff pastry
Thaw puff pastry. Place cream cheese pumpkin puree and pumpkin spice in a food processor and blend well stopping and scraping down sides to make sure everything is blended well.
Cut the puff pastry into four equal squares. Dollop one heaping tablespoon of mixture on to center of puff pastry. Take opposite ends of the square and pinch them together until all side are met in the middle.
Place on a baking sheet in a preheated 375 degree oven for 30 minutes. After baking remove from oven and sprinkle cinnamon and drizzle with local honey for sweetness.
For a super sweet treat take the remaining mixture and spread some Nutella in the middle of the puff pastry before you add your pumpkin spice mixture and sprinkle in some walnuts. Pinch the four sides together and bake on a 400 degree oven 25 minutes. Remove and sprinkle with cocoa powder and maple syrup. You won’t be keeping these around for long. I think they lasted 5 minutes in my house.
These easy little puff pastries are great to make on a nice fall day when you want to bake something but don’t want to spend all day doing it.
