This is a great alternative to mashed potatoes.

- 1 whole cauliflower green stem removed
- & diced
- Salt & pepper
- 3 cups Water
- 2-3 tspn Butter
- Boil water and add cauliflower. Steam cauliflower. Remove and discard water & place in a food processor with salt, pepper & butter and blend well making sure there are no lumps. To kick it up a notch for a dinner party drizzle in some truffle oil in the end.
