My little healthy breakfast secret!

It’s easier than you think to make a healthy breakfast. My friend Tiffany is addicted to making these little babies for her family.  Once I taught her my dirty little breakfast secret she was off to the races.

You can make them in so many ways & so many varieties. She needed more protein in her diet so, these little babies came in handy  for breakfast or anytime she needed a boost of protein.

I am not a morning person& probably never will be but, I  can feel the difference when I eat a healthy breakfast packed with protein first thing in the morning. I love omelette’s but there’s no way in hell I’m making them for anyone in the morning. I don’t even remember where I found this idea from but, when I did I became obsessed!

You’re probably wondering what the heck I’m talking about. Let me finally tell you “my little healthy breakfast secret”. I named them “quichtini’s”. You’ve probably seen them before. Their eggs baked in cupcake tins.

The great thing about them is that you can make a dozen or two or three and keep them in the frig so everyone can have a gourmet breakfast in the morning. 

Here is the simple recipe & ingredients.

  1. 1 dozen farm fresh eggs
  2. 1/4 tsp salt & freshly ground black pepper
  3. 3/4 cup milk (optional)
  1. Preheat oven to 350.
  2. Crack eggs in a bowl. Whisk well. Grease or line tins.
  3. Fill tin with desired fillings and add egg mixture til it's filled about 3/4 way up.
  1. You can fill each tin with different ingredients to create a wide variety of variations.

The cool part about it is that you can create a wide variety of flavors to please everyone in your family.

Here are a few of my variations.

Greek – feta cheese, diced red onion, green peppers, diced tomato, sautéed spinach

Spanish – add salsa (either to the mix before or add after cooking)

Caprese – diced tomato, fresh mozzarella, chopped basil or pesto

Lorraine – chopped low-sodium ham, sautéed diced onions and grueyere or swiss cheese

Farm to table– zucchini, broccoli, peppers, onions, spinach (or any veggie combo)

You can also just crack the egg right into the cupcake tin & bake them like that! I love doing this sometimes when i’m in a rush or just want something plain.

Here’s another little tip, you can line the tins with low sodium ham & then crack your egg in sprinkle some cheese on top for an easy ham, egg & cheese.

Now you try them out this week. Make a dozen for your family. If you have little kids you may want to be simple and do some broccoli & cheese in them.

Or, you may want to get fancy with yourself and put some sauted wild mushrooms & gruyere cheese in them. If your hubby is a meat & potato kind of guy toss in some onions, peppers & chicken sausage in his.
