Cucumber & Red Onion Salad
I love red onions and put them in just about anything I can put them in. You can take this basic salad and add so many things to take it in many different directions.
For a Greek twist add- black olives & feta cheese
Latin twist add- red, orange, yellow peppers & cilantro. Maybe even toss in some black beans for protein.
Italian twist add- Diced tomatoes, basil & fresh mozzarella
Middle Eastern add- Lentils & Greek yogurt
- 4 cups sliced Cucumber
- 1 cup Red onion salad slice
- 1/4 cup minced Parsley
- 1 cup Red Wine vinegar
- Salt & Pepper to taste
- Mix all ingredients together & let it sit for at least 15 minutes.
- Get creative with this simple recipe. Add beans, veggies & cheese to take it in many different directions.
