Cucumber & Red Onion Salad

I love red onions and put them in just about anything I can put them in. You can take this basic salad and add so many things to take it in many different directions. 

For a Greek twist add- black olives & feta cheese

Latin twist add- red, orange, yellow peppers & cilantro. Maybe even toss in some black beans for protein.

Italian twist add- Diced tomatoes, basil & fresh mozzarella

Middle Eastern add- Lentils & Greek yogurt

Ingredients
  1. 4 cups sliced Cucumber
  2. 1 cup Red onion salad slice
  3. 1/4 cup minced Parsley
  4. 1 cup Red Wine vinegar
  5. Salt & Pepper to taste
Instructions
  1. Mix all ingredients together & let it sit for at least 15 minutes.
Notes
  1. Get creative with this simple recipe. Add beans, veggies & cheese to take it in many different directions.
