Ingredients
  1. 1 can crushed tomatoes
  2. 1 onion, 3 cloves garlic, Salt & pepper
  3. 2 teaspoons salt, ½ teaspoon pepper
  4. Basil, 2 tablespoons oil
  5. For the cream:1 head cauliflower & 4 cups water
Instructions
  1. Heat oil on high flame in soup pot add diced onions &sprinkle with salt & pepper. Add 1 can crushed tomatoes and stir in 1 ¾ can of water using the same can the crushed tomatoes came in. Bring soup to a boil, reduce heat to a low flame. Cook for 1 hour & stir occasionally. While soup is cooking chop cauliflower and boil. When cauliflower is soft blend 2 cups water and 4 cups cauliflower in a blender and puree. Add pureed cauliflower to tomato soup and season with salt & pepper. For added taste add fresh basil or pesto.
Notes
  1. This is a great cream soup for those of you who are like myself and cannot tolerate dairy.
