  1. 1 chicken carcass
  2. 6 carrots peeled and chopped
  3. 2 onions peeled and chopped
  4. 4 stalks celery washed and chopped
  5. 6 cloves garlic
  6. 1 tablespoon whole peppercorns
  7. 1 bay leaf
  8. Handful of parsley stems
  9. 24 cups or 1 ½ gallons of water
  1. Making sure all meat and skin are off the chicken carcass, place all ingredients in a large pot and boil. When stock begins to boil turn flame on low and simmer for 12-24 hours on the lowest flame on your stove. Add 2-4 cups of water every 6 hours.
  2. When broth is done strain in a fine mesh strainer into a bowl or container. Next, cool it in your refrigerator and remove any fat that has risen to the top. Broth can be drunk alone or used in soups, stews or sauces. You can also freeze it for several months.
